Mediterranean Mezze Wrap
Ingredients
- One large piece of Pita Bread
- 3-4 TBS of Hummus ( Sun-Ni brand if you can get it of course )
- 3-4 TBS Tabouli
- Sliced grilled chicken (If you want to keep this vegetarian, omit the chicken and add some grilled tofu, stuffed grape leaves or grilled veggies )
- Sun-Ni string cheese – original or marinated
Method
- Spread hummus on pita, top with tabouli, chicken and cheese. Wrap up and Enjoy! These are great for a picnic and travel well.
The Ultimate Summer Grilled Cheese
Ingredients
- 2 slices bread of bread
- 1-2 tablespoons Pesto
- 3-4 oz of strung out Sun~Ni String cheese
- A grab of fresh baby spinach
- 1/2 avocado, sliced
- 2 slices fresh Jersey tomatoes
- 2 tablespoons mild goat cheese or feta, crumbled
- 1 Tbs olive oil and 1tsp butter
Method
- Spread both pieces of bread with the pesto. Top one slice of bread with the spinach, tomato, string cheese, avocado, and lastly the goat cheese. Put the 2nd slice of bread on top, pesto side down.
- Heat the olive oil in a pan or griddle. Grill the sandwich until golden brown on the one side. Remember to press down slightly while cooking. Gently flip the sandwich and continue cooking on the other side. About 8-10 minutes total.
- Serve this alone, with some healthy chips or a nice bowl of a cold summer soup.
Smoked String Cheese and Penne Pasta Salad
Dressing Ingredients
- 1/4 cup grated parmesan cheese
- 1/2 cup chopped fresh parsley
- 1/2 cup mayonnaise
- 1/4 cup white wine vinegar
- 3 garlic cloves, minced
- 1 pinch cayenne pepper
- Salt & fresh ground pepper, to taste
Salad Ingredients
- 12 oz penne pasta
- 3 cups packed baby spinach leaves, washed and stemmed
- 2 large roasted red peppers, diced
- 4-6 oz smoked Sun-Ni String Cheese, sliced
Method
- Process the dressing ingredients in food processor or blender until smooth.
- Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled.
- In a large bowl, combine cooked pasta, spinach, roasted red peppers and smoked string cheese.
- Toss the salad with the dressing then serve.
Quinoa Tabouli with Parsley and Mint
Ingredients
- 2 cups cooked quinoa
- 1 cucumber, skin on, seeded and diced into small cubes
- 1 cup finely chopped flat leaf parsley
- 1/2 cup finely chopped fresh mint leaves
- 1/2 cup quartered cherry or grape tomatoes
- 1/4 cup finely chopped red onion
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice, or to taste
- 1 clove garlic, peeled and cut in half
- 1/2 teaspoon fine sea salt (like Real Salt brand)
Method
- Whisk together the olive oil, lemon juice and salt in the bottom of a large bowl. Add the garlic to the dressing and let it marinate while you prepare the other ingredients; discard the garlic halves before adding the rest of the ingredients. Fold in the rest of the ingredients and chill. Serve cold or room temperature.
Summer Harvest Frittata
Ingredients
- 10 Eggs
- 3 TBS of milk
- 1 package of Sun-Ni String Cheese ( Strung )
- 2 cups chopped Kale or Spinach
- 1 cup of sliced olives
- 1 ripe tomato seeded and diced
- 1 diced red pepper
- 1/2 cup diced onion
- 4-6 medium sized grated potatoes
- 1/3 cup shredded parmesan cheese
- 3 TBS chopped parsley
- Olive Oil
- Salt and Pepper
Method
- Pre-Heat oven to 375 degrees.
- Spray a 9 x 11 baking dish with cooking spray. Set aside. Next, take a large frying pan and coat with olive oil. Add potatoes and fry until soft. Remove from the pan and put on the bottom of the baking dish. Wipe out pan and add kale, season with salt and pepper and sauté until slightly wilted. Put the cooked kale on top of the potatoes. Next, sauté the onions. When browned, add peppers and tomatoes. Cook until soft. Remove from pan and put on top of kale. Let this cool. Add chopped olives on top.
- In a bowl mix eggs, milk and parmesan cheese. Pour the egg mixture on top of the vegetables. Next, top with the strung Sun~Ni string cheese. Then top with parsley. Bake uncovered for about 30-40 minutes until the dish is set and the cheese brown and bubbly.
Caprese hors d’oeuvres
Ingredients
- 12 cherry tomatoes
- 12 bite size pieces of our traditional or marinated string cheese
- 12 basil leaves
- 2 TBS olive oil
- 2 TSP balsamic vinegar or balsamic Syrup
- 12 small bamboo skewers or toothpicks
Method
- Thread one tomato onto a skewer, then thread a piece of cheese, then wrap the basil leaf around both of them and thread onto both ends of the skewer. Mix the olive oil and balsamic and drizzle over the skewers.
Pita Chips
(This is particularly good with our pesto cheese as the cumin balances the salt and mixes oh so well with the basil, pine nuts, walnuts, and nigella seeds in pesto cheese.)
Ingredients
- A bag of pita bread
- Olive oil
- A dash of cumin
Method:
- Preheat oven to 350 degrees
- Cut some pita bread into small triangles
- Spray (or rub) the sliced pita bread with olive oil
- Lightly dust the oiled and cut pita with some cumin
- Bake in the oven until the pita is lightly brown, usually about 10-15 minutes
Spicy Grilled Cheese
Ingredients
- 1 Pita bread with pockets
- 4 oz. of our marinated string cheese
Method:
- Cut pita bread in half and open pockets.
- Stuff each half with approx. 2 oz. Italian Marinated String Cheese
- Place pita pockets in oven at a temperature of 300 degrees*
- Remove and serve immediately when cheese is melted and pita is toasted.
Gourmet Cheese Pizza
Ingredients
- 1 Pita bread with pockets
- 4 oz. of our Italian marinated string cheese
Method:
- Place pita bread on foil lined tray
- Sprinkle approximately 4 oz. of Italian Marinated String Cheese on top of pita
- Place in oven for approx. 15 minutes or until cheese is melted
- Cut into quarters and serve immediately
Fresh Tomato, Cheese and Basil Sauce
Ingredients
- Fresh ripe tomatoes
- Basil leaves
- Sun-Ni marinated string cheese
- Your finest olive oil
- Salt and Pepper to taste
Method:
- Begin boiling water for your favorite pasta
- Slice tomatoes into 1'' chunks (and save the juice!)
- Wash your basil leaves
- Cut your Sun-Ni cheese into 3/4'' length
- Combine in a bowl: your sliced tomatoes, cleaned basil, cheese, a swig of olive oil, and salt & pepper to taste
- Cook your pasta according to the method on your box
- When the pasta is done, immediately drain it then place it in a large serving bowl
- Spoon the fresh tomato and cheese mixture that you made earlier on top of the cooked pasta
- Plate the dish to order and while it is still hot. Be sure to swirl the sauce through the hot pasta
Pizza Panini
Ingredients
- Fresh ciabatta rolls
- Traditional marinara (in jar)
- Marinated string cheese
- Sliced pepperoni arugula leaves
Method:
- Split rolls in half
- Slice cheese into medallions
- Spread Marinara on one side of bread
- Layer pepperoni, cheese, and arugula on bread
- Top with other half of bread
- Wrap sandwich in tin foil and toast or grill for approx. 15 minutes at 375 degrees. Or place in a Panini/Grill press for 4 minutes per side.
Vegetarian Pita Sandwich
Ingredients
- 1 pita bread with pocket
- 1 Tomato
- 1 Cucumber
- Baby spinach leaves
- Two pinches of alfalfa sprouts
- 3 oz. Sun-Ni hummus
- 1 oz. Sun-Ni string cheese (any variety)
Method:
- Cut pita in half and open the pockets
- Spread the hummus inside the pita pockets
- Stuff each half of the pita with the remaining ingredients
- Serve!
